Bobotie meatloaf
From Sophie Grigson’s Meat Course Recipe Book. This is a great way to dress up cheaper cuts of meat. It is an old Malayan dish full of spices and fruit, held together with egg and soaked bread. MEAT 1lb or 450g of Minced, Stewing or Braising Beef, or Minced Lamb OTHER INGREDIENTS
Preheat oven to 180ºc/350ºf/gas 4. Fry the onion and garlic in the oil until lightly browned. Soak the bread in the milk, then squeeze out the bread, keeping both bread and milk separate. Mix the fried onion and garlic with the meat, curry powder, sugar, lemon juice, almonds, raisins, salt and pepper, and soaked bread. Beat one of the eggs into the mixture. Spoon into a greased pie dish and smooth down. Beat the second egg in the reserved milk and poor over the meat mixture. Bake for 1 hour until the top is set and browned. Serve with rice and a fruit chutney.
